For the last 150 years, New Zealand's economic development has revolved largely around the production of food. For most of that time, Lincoln University has been involved in education and research in farm production and the development and marketing of our major food exports.
Now the industry is changing. Food companies are taking advantage of international trends in people's lifestyles and eating habits and major changes in the food retail sector by producing high quality, consumer-ready food products.
Lincoln University's focus on the primary sector has gradually extended 'beyond the farm gate' to the processing and marketing of food products. This has led to the teaching in a number of food and food related areas such as food processing, food biochemistry and food microbiology.
Research undertaken includes factors associated with the keeping quality of fresh produce; factors affecting meat tenderness; relationships between growing conditions for grapes and the quality of the resulting wine; the structure and functioning of markets for food products; and structural problems in the meat processing sector. Supply chain management's role in the food industry has been an area of focus in recent years.
